
I threw together this quick pasta dish for our second anniversary tonight, and it sort of reminds me of Julie- beautiful to look at, and then filled with such rich gooey warmth it just made me glad that I was smart enough to order such a great dish.

Stacy- I post recipes occasionally, but this dish was just made from what was on hand. The classic technique would involve sauteing what ever vegetables you want to use- I used scallions and leftover asparagus, then reducing heavy cream to the right consistency, then adding the precooked protein and some parmesan cheese at the end, then tossing with the cooked pasta.
Because I didn't have any cream, I made a bit of a roux with olive oil and a little flour, then used the 2% milk we had. Although a purist would abhor the flour in the dish, realistically there would be starch in the sauce from simmering it with the pasta anyway, so It worked just fine.
I've always been much more about technique than recipes. I think it makes you a much better cook, and it's much more empowering to be able to raid the fridge and the pantry to create a really good dish. Thanks for asking!
