Well, the weather has dipped below 90º here, so soups and stews are on my mind again. To get the party started I made traditional beef stew, with some Hatch green chiles added to give it a little zip.
This was really, really basic stuff- all natural beef, Yukon Gold potatoes, red onion and organic carrots, along with Survival Spice®, some extra garlic, and some red wine.
Maybe we should have a Soup and Stew Food Fight.
It was GOOD. Way too healthy, but good.
I wish we got Hatch Chile's in Calif. Raley's actually carried them one week. I took them to Cookiecrumbs party. Dr. Biggles grilled them over a custom grill that he dug up in the lawn. After they were grilled, I stuffed them with jack cheese, wrapped them in foil, and waited for the cheese to melt. We sliced them and added a little salt. They were the BOMB. Everybody liked them. They wanted to know the recipe. Something so simple, but so good!!!!
I have some Chimayo chiles a friend of mine gave me the other day. It's a northern New Mexico chile, as opposed to the southern Hatch type. Full report coming soon...
