It is a one cooking day. The fruitcakes are out and getting marinated, and so am I!
His looks more authentic that the fruitcake I attempted last year, maybe I just wasn't drinking enough... What's your take on this Christmas "classic"? I have a friend who actually makes a fruit cakey- loafy thing I really like.
I have found that either you are a fruitcake person or not. I have heard all the jokes and appreciate them. I think a lot of people are turned off by the glaceed fruits and or the citron. I do not use them. I use high quality dried fruits and nuts. In fact the price list of ingredients is expensive. A little goes a long way. The list of people that want some of my fruitcake is growing. If you have more than one piece, you might have to designate a driver. Peace,Paul

I have a good fruitcake type cookie recipe I can share. It is called Christmas Icebox Cookies and I make them every year.
I am at work but forgot that I have the recipe right here.
Christmas Icebox Cookies
This makes 9-10 dozen.
1 pound butter (real butter-no margarine!)
2 1/2 cups sugar
3 eggs
1 Tablespoon light Karo syrup
1 teaspoon baking soda
1/4 teaspoon salt
5 1/2 cups flour
1 cup nuts (optional)
1 cup red and green candied cherries, chopped
Mix in order given but when you get to the flour, you will have to mix it with your hands. Chill the dough and then form it into long rolls. Wrap the rolls in wax paper and freeze. Slice and bake at 350 degrees for 10 minutes or until browned lightly on ungreased cookie sheet. Do not overbake or you will have hockey pucks.
These are great breakfast cookies.
