Diana's Curried Spam® and Mango Salad

Here's our entry from north of the border. Diana found a turkey version of Spam® that I didn't know existed, and found a very creative way of presenting it as an appetizer that I'll include in the extended entry. Nice job, Diana! Tons of imagination here, I think.

Diana's Curried Spam® and Mango Salad

Well, I bought the SPAM and chose the turkey breast. My brother has a dog.

So .... serves 8 (with leftovers)

1 can turkey SPAM (cubed)

1/2 c. Madras curry paste
1+1/2 t. Light Mayo .....oh wait ...... that's the wrong way around.

It should read 1/2 c. light mayo
1+1/2 t. Madras curry paste

1 ripe mango peeled and chopped
1/4 c. finely sliced red onion
1/2 sweet red pepper, chopped
1/3 c. toasted chopped pecans
1/4 t. each salt and freshly ground black pepper
8 leaves romaine or single leaves of endive with a tsp. in each ... like for a snack
chopped flat leaf parsley
lime wedges

One of my Mum's friends told me that ... in the olden days ... they used to glaze it and roast it like a ham.

I didn't add any Survival Spice. It would have been a sin.

Actually, it was briefly edible ... thank God for curry.

I had to wash the underbelly of the armadillo.
