... But certainly not the last. These were rubbed with Survival Spice™, indirectly smoked with pecan wood for 4 hours, then finished over a charcoal fire. Although I'll occasionally do an indirect-only smoke for 7 or 8 hours, I like how a medium direct fire crisps up the meat, and the higher temperature completes the last step towards 'falling of the bone' goodness.
What's your favorite way of cooking ribs? Or eating them, for that matter!

Oops, all gone, Shell. They were pretty darn good, though. Ribs are good just with Survival Spice™ and popped into the oven, too, so don't sweat it if you don't feel like grilling. Just cook them low and slow until they're tender and flexible, then crank the heat up at the very end to crisp them up.
Ya know the cool thing about pork spareribs? They're made out of pork.
Pork is good roasted, grilled, smoked, or pan fried. Ribs are good cooked directly, smoked or smoked and then grilled. Pork is that way. Pork is good food.

Ya know the best pork ribs I have had, and I cooked them myself, was when I had my old charbroil grill.
See, it was fairly large and had a rotisserie. I could weave on 2 slabs of ribs and set the motor going with a sparse wood fire below. It was a slow direct fire with smoking chips. They'd cook up fine in about 2 hours. The meat came from the bone when lightly tugged with teefs, there was still plenty of juice (fat) and the cooking directly gave a caramelized punch that was outstanding. And since it was a rotisserie, self basting/turning/tending. Real fire, real que, real damned easy.
