Let's talk Burgers

I'm setting up a burger bar for Saturday football, just because the last one was such a hit, and I'm looking for some new garnish ideas. I'm already going to heavily carmelize a bunch of shallots and maybe roast some pasilla chiles, along with some of the other usual stuff, but I'm asking all of you for ideas.

What's your dream burger? Beef, turkey, chicken, portabello, tofu? What kind of bread? What do you like to top it with? What do you serve with it? And quit drooling already, it's beneath you!

Well, you gotta have bacon in there.

Howabout stuffing the burger meat with something? The easy one is a hunk of bleu cheese. But I would think maybe habanero salsa of some kind would be good too.

Ooo, howabout lamb burgers with some of that far eastern action? Fresh cilantro, minced garlic, lemon zest and curry powder? Mebbe some cayenne too.

Or do the lamb burger idea, highly spiced and smoked on the grill as a loaf. Then, slice it to some fancy bread with tahini sauce.

Ack, my brain is splitting. For the first time ever I decided to try an energy drink, d'X Power. Man, I'm all over the board and can't think! I don't feel spiffy, just all splayed out. Just as useless as I thought it was.

I'd love to do lamb burgers, but I don't think they'd go over with everyone.

Bacon's in, though. Without a doubt.

Wow, that Biggles has some great ideas for burger toppings. I'd never be able to eat lamb, being the mainstream hick I am, but the cilantro, etc. toppings sound yummy.

Lamb makes a tasty burger, Julie. Cardamom is a good substitute for lemon zest, I like to add dijon mustard to help keep it moist, and usually I'd use shallots, but Dr. B is right on the money.

Which is why I rarely visit MeatHenge before I put a bib on.

My dream burger is - onion bun, patty about 1/2 inch thick and slightly oversized - medium rare, red onion, green leaf lettuce, dijon mustard, tomato, pepperjack cheese with a side of icy cold beer
