
(TPCs "Cowboy Cupcake", v1)
Here's a dessert I've been working on. I'm calling it a "Cowboy Cupcake" for now, but it's actually more like a soufflé with a cowboy twist. I'm using Scharffen Berger chocolate and I'm fooling around with ancho and pequin chiles, toasted pine nuts and coffee with this one. I'm actually pretty happy with this, it has a really decadent molten center and just a nice background touch of heat, now to figure out what to serve with it. I'm thinking about maybe some sort of creme anglaise or a whipped cream. Any ideas?
It's been a real chore having to eat one of these every day, but it's all for science...

Cold beer, good idea! Of course now I might have to take a break from work and go swimming to enjoy it properly.
Interesting you mentioned lime. I just bought some apricots for something else I'm doing and I thought that might be an interesting element, they have a bit of a tang to them because they're not quite ripe.

Your creme action would go very well with the rich chocolate, der. But you've got some fancy peppers in there. What goes well with peppers or pepper related things as a condiment? Limes. But you already knew that and I have no idea how deserts or desert cremes work. I do know that if I don't get a lime wedge with any Mexicanny platter I ask for one. The pure brightness it lends topples me over.
What would that angled creme be like with the same pepper combo as the desert?
creme fraiche? burbon anglaise? I'd want something clean and bright.
How chocolate-y is it? I need a scale.
Mega chocolate. The chilis warm it up a bit, and anchos play a little on the raisin side, but it's uber-chocolate with a hint of coffee and chili as it sits now. I'm going to up the ancho some more and maybe a touch more coffee but the flavor is HUGE already.
Perhaps orange anglaise? burbon would be too much.
And you know what's extra tasty? It's a Martha Stewart recipe for ginger cookies with chocolate chips. I wish her baking recipes were by weight.
