
Man, is Michel (aka King Cone) obsessed with French Belgian Fries! Here's a Belgian website dedicated to the fried potato. The site includes a section dedicated to the "frietkot" or fry shack, little booths that serve only fries.
He also includes the recipe for preparing and cooking a proper fry, which I endorse. The twice cooked method is the ultimate way of insuring a crispy fry that's tender inside. BTW, a Belgian fry is never served with ketchup or vinegar, only mayonaise. Okay, he kinda loses me there...

My brother inlaw does the mayo and fries, I don't get it either.
I'm a fan of the double deep fry action as well, but since the fries have to be washed, then dried semi-individually, I don't do it much anymore.
